Svetlana Morozova runs a short, deliberate seafood list from Corrimal, on the Illawarra coast south of Sydney. Octopus, brown crab, crayfish tails, tuna, sole and a handful of mixed boxes: the range is chosen so that every item has a clear use in a normal kitchen.
